    For three special evenings, brothers Louis and Martin Isabal will take over the kitchen at Les Mômes. With a tasting menu inspired by Basque flavours, these chefs from the Basque Country will transport you to Ainhoa, the village where their MICHELIN-starred restaurant, Ithurria, is located.

    A fourth-generation restaurateur, Louis Isabal carries on the pastry tradition at his family’s restaurant, Ithurria, in Ainhoa. Trained in several Michelin-starred establishments and passionate about chocolate since childhood, he developed a precise, balanced, and generous style. These formative experiences shaped a sensibility rooted in pure flavours and refined textures. Back at Ithurria for the past seven years, he now creates elegant pastries that blend tradition with modernity, true to the spirit of this iconic house.

    A fourth-generation chef, Martin Isabal carries on the family’s culinary tradition at Restaurant Ithurria, which he has led for four years alongside his brother Louis and under the guidance of their father, Stéphane. Trained in renowned establishments such as Le Prince Noir, Les Sources de Caudalie, and L’Assiette Champenoise, he has developed a rigorous, technical, and inventive approach to cuisine. A versatile chef, he also excels in butchery and charcuterie, earning the title of World Boudin Champion in 2024. Today at Ithurria, he crafts precise and creative dishes that highlight local products while honoring a family heritage marked by 57 years of Michelin stars.
