Snowdon Deli and La Spada unite for MTL en Lumière in a unique celebration of The Deli’s 80th anniversary, honoring a true Montreal icon. In an ode to gastronomy, this event explores the Italo-Jewish connection: hand-cut hot smoked meat meets carbonara, matzo balls and kreplach meet table-side brodo service. Two worlds coming together at one table. Expect nostalgic dishes, friends, laughter, and the warmth that defines Montreal’s culinary scene.

Paul Michette
Le Spada

Paul Michette is the Chef de Cuisine at La Spada, where his deep-rooted passion for Italian cooking meets a clear, focused culinary philosophy: K.I.S.S. – Keep It Simple, Stupid. A lifelong student of Italian cuisine, Paul was raised in a red sauce Sunday family and began learning to cook from his father at an early age. He still reads cookbooks daily, constantly refining his approach to classic Italian dishes with a modern Montreal twist. His previous experience includes Le Bremner and serving as sous chef at Mano Cornuto.

Hart Fishman
Snowdon Deli

Hart Fishman, co-owner of Montreal’s beloved Snowdon Deli, a post-war delicatessen founded in 1946 (celebrating its 80th anniversary) by the Morantz brothers, is a fourth-generation restaurateur continuing his grandfather Phil Morantz’s legacy. The Deli blends old-world recipes and smoked-meat craftsmanship with a strong sense of community and hospitality. Under his care, Snowdon Deli remains true to its roots as a neighborhood gathering place, an industry institution, and an iconic piece of Montreal’s history.
