La Chronique will welcome Chef Cédric Burtin, holder of two Michelin stars, from the restaurant L’Amaryllis in Saint-Rémy, on February 19 and 20, 2026. A true tribute to French gastronomy, the chef will offer an exclusive tasting menu created especially for Montreal and executed by La Chronique’s team under his direction. His cuisine, both elegant and precise, deeply rooted in Burgundy’s terroir, promises an experience of great refinement. The arrival of Cédric Burtin will undoubtedly be one of the highlights of the festival.


Originally from Burgundy, Cédric Burtin grew up in a family of Charolais cattle breeders, where he developed a deep connection to the terroir. Trained under renowned masters such as Pierre Orsi, Guy Lassausaie, and Paul Bocuse, he opened his first restaurant at just 23. In 2010, he settled at the Moulin de Martorey in Saint-Rémy, where he created L’Amaryllis. Awarded two Michelin stars in 2023, he offers refined and sincere cuisine deeply rooted in the products of Burgundy.

La Chronique invites you to enjoy a 4-course menu at $95 per person, available until Saturday, March 7, 2026.
The evening will begin with a selection of amuse-bouches, followed by a winter vegetable carpaccio enhanced with a truffle vinaigrette. Next, enjoy a trout from Pourvoirie Kenauk, served with sorrel beurre blanc, followed by a duck breast with spruce honey. The experience concludes with an elegant sweet treat.
