Heni proposes a multi-part collaboration for MTL en Lumière exploring the connections between Quebec culture and the Arab diaspora. We aim to host Chicago chef Ryan Fakin of Beity and Lebanese winemaker Rami El-Sabban for a special menu and storytelling experience. We will also offer select daytime events such as workshops, talks, screenings and interactive lunches, highlighting the Arab diaspora’s influence on our shared history.

Julien Robillard
After a year-long stint in Japan, Julien Robillard returned to his native Montreal to lead the team at the famed Hôtel Le St-James. He then joined Pastel, an acclaimed concept rooted in storytelling. Chef Julien arrived at HENI eager to continue his research-driven approach and experiment with fermentation, miso and koji, all the while celebrating traditional recipes of the "SWANA" region.
