Victor develops Quebecois cuisine in close collaboration with Marc-Antoine. Their first project, St-Sapin at Jardins de Sophie, is an agri-tourism establishment located on a farm that highlights Nordic products. In recent years, Victor has worked at Club Chasse & Pêche and now at the restaurant Terroirs. His cuisine focuses on seasonal, cultivated, and wild products, presented as generous and nostalgic dishes. It is a cuisine that constantly explores the identities of Quebec’s terroirs.

Jean-Sébastien Sicard is a self-taught chef and co-owner of Chez Mathilde in Tadoussac. Founded in 2007, the bistro has become a culinary reference in the province and was recently recommended by the Michelin Guide. His cuisine focuses on fresh, local ingredients from the Côte-Nord, including seafood and forest products, to create a constantly evolving seasonal menu.
