A series of three unforgettable experiences showcasing the craftsmanship and unique products of Quebec’s diverse regions. From the Côte-Nord to Montreal, we’ll explore the rich and sometimes overlooked ingredients from our fields, forests, and waterways through a ten-course, 100% local menu. Technique, indulgence, and creativity come together to deliver an exceptional gastronomic experience, featuring Jean-Sébastien Sicard, Chef of the restaurant Chez Mathilde, recognized by the Michelin Guide.

Victor Baumont
Terroirs

Victor develops Quebecois cuisine in close collaboration with Marc-Antoine. Their first project, St-Sapin at Jardins de Sophie, is an agri-tourism establishment located on a farm that highlights Nordic products. In recent years, Victor has worked at Club Chasse & Pêche and now at the restaurant Terroirs. His cuisine focuses on seasonal, cultivated, and wild products, presented as generous and nostalgic dishes. It is a cuisine that constantly explores the identities of Quebec’s terroirs.
