Six-course tasting menu prepared à quatre mains, showcasing the culinary talents of Maira and Patrice.

After working as a pastry chef for 15 years in several Montreal restaurants and co-owning Patrice Pâtissier for over eight years, he became co-owner of Sabayon in 2023 alongside Marie-Josée Beaudoin. Recognized as one of Canada’s finest pastry artisans, his passion now drives him to explore both savory and sweet creations. After being named “Best New Restaurant” in Canada by enRoute magazine, Sabayon was awarded a Michelin star with the release of the very first guide in May 2025.

Originally from Singapore, Maira Yeo is known for her creative desserts that blur the line between sweet and savory. In Singapore, she worked at Meta and Cloudstreet, where she was named Asia’s Best Pastry Chef in 2022 for her minimalist and bold creations. She also completed a stage at Maaemo in Oslo before joining EHB in Shanghai. She is now back in Singapore, working as a consultant.
