Normand Laprise has been the chef-owner of Restaurant Toqué for more than 32 years. He is regularly invited to cook internationally, where he happily showcases Quebec’s gastronomy. A graduate of the Pastry program at Lester B. Pearson School, Johnny began his career at Toqué in 2015 as a pastry commis. After several years at Toqué and other kitchens to broaden his experience, he became head of the department in 2019. His dessert philosophy aligns fully with Toqué’s DNA: creativity guided by seasonality and the celebration of Quebec’s terroir. Johnny prioritizes purity of flavor, technical precision, and a continuous exploration of exceptional local ingredients.
