Exclusively co-created dishes using local and seasonal ingredients will be served, some inspired by classic local cuisine and highlighting Chef Bishop’s signature style, rooted in Western Canada. Pairing offered with Canadian, Quebecois, and privately imported wines.


Born and raised in British Columbia, Mathew’s passion for cooking is rooted in the landscapes and flavors of the West Coast. After years honing his craft across Western Canada, he has developed a style that celebrates fresh, seasonal ingredients and the purveyors who bring them to life. Under his direction, Gary’s earned a place among Air Canada’s Top 10 Best New Restaurants of 2024, as well as a Bib Gourmand from the MICHELIN Guide in 2024 and 2025.
