
Louis-Joseph Rochefort brings his international experience and passion for innovative cuisine to Molenne. After rising through the ranks at Chasse et Pêche and Le Serpent, and refining his craft at the two-Michelin-star restaurant Attica, he returned to Quebec. In just eight months, Molenne has already been recognized as one of Air Canada’s best new restaurants.

Born on a dairy farm in Alma, Lac-Saint-Jean, Québec, Hugue Dufour developed an early and lasting connection to livestock and cooking. After briefly attending culinary school, he honed his craft in some of Québec’s most renowned kitchens, including Toqué! and Au Pied de Cochon, where he became chef and partner and was featured in the documentary Durs à cuire as well as numerous television appearances. In 2010, he and his wife Sarah Obraitis opened M. Wells in New York, quickly recognized by The New York Times as one of the world’s top dining destinations, followed by acclaimed ventures at MoMA PS1 and M. Wells Steakhouse. Over the years, M. Wells evolved into a vibrant cultural hub blending food, art, and large-scale events, earning extensive international media attention. In spring 2026, Hugue Dufour brings his signature creativity and warm hospitality back to Québec through a new project with longtime collaborators Famille Migneron, continuing a career defined by bold vision and global influence.
