
Romain Chassignet, Executive Chef of Bistro Modavie, has 25 years of international experience. Trained in Alsace and introduced to cooking by his grandmother, he traveled the world before settling in Quebec in 2021 at Manoir Hovey. His cuisine combines French foundations with North American terroir. A member of the Académie Culinaire de France and the Chaîne des Rôtisseurs, he emphasizes seasonality, local producers, and the authenticity of ingredients.

Roland Ménard is an iconic Quebec chef who served as executive chef at Manoir Hovey (Relais & Châteaux) for 43 years. Self-taught and a passionate advocate for the terroir of the Eastern Townships, he shaped Le Hatley’s dining experience by highlighting local producers and seasonal harvests while mentoring generations of chefs. A respected figure, he has left a lasting mark on the culinary identity of the establishment, and his award-winning cuisine remains a benchmark in Quebec hospitality.

Sister Angèle (Angiola Rizzardo), born in 1938 in Cavaso del Tomba, Italy, and immigrated to Quebec in 1955, is a nun and a culinary icon. A member of the Notre-Dame-du-Bon-Conseil congregation, she taught at the ITHQ and helped popularize cooking on television. She is the founder of the Sister Angèle Foundation, which supports young people through food programs. She was named a Knight of the National Order of Quebec (2016) and a Member of the Order of Canada (2012/2013).
