After steering the helm of Le Détour with his wife for three years, Adrien Cachot opens a temporary fry shop in Paris and then settles into the kitchens of Le Perchoir de Ménilmontant. Since September 2002, the contestant who made it to the finale of Top Chef France has been behind the stoves at Monobar, a tapas bar located in a popular food court near Gare Montparnasse. In his book "Hors Piste," he presents recipes that highlight seasonal, forgotten, and sometimes less noble ingredients, which he skillfully elevates through his expertise.
