    Born in Montreal, Executive Chef Jason Morris began his career as a poissonnier before studying at the Institut de Tourisme et d’Hôtellerie du Québec (ITHQ). After honing his craft in New York with Chef Paul Liebrandt, he brought his innovative approach to Marcus Restaurant, where he celebrates local ingredients and refined techniques. Recognized as one of Canada’s Top 10 Chefs, he continues to inspire the next generation.

    Mads Refslund is a Danish-born chef and co-founder of Noma, the world-renowned Copenhagen restaurant that redefined New Nordic Cuisine. Known for his innovative and sustainable approach, he later opened the Michelin-starred MR and New York’s ACME. In 2023, he launched ILIS in Brooklyn, acclaimed as one of the world’s most beautiful and best new restaurants. Guided by his “bonding rawness” philosophy, Refslund celebrates nature’s purest flavors through ingredient-focused, responsible cooking.
