After numerous international stays, including one in Australia at the renowned Mietta’s Queenscliff Hotel and another in France, where he became chef de partie at the two-Michelin-star restaurant Gill, Mathieu was left with only one dream: to open his own restaurant. Joining forces with Jean-Philippe St-Denis, they opened Kitchen Galerie in the summer of 2007. Mathieu’s success did not stop there. At the end of 2009, he won the Gold Medal Plates, earning the title of Canada’s best chef.
