Chef David Lepage is the Executive Chef at Hoogan & Beaufort, where he shapes the restaurant’s culinary vision alongside owner-chef Marc-André Jetté. Their cuisine is known for its elegance, precision, and contemporary flair. David Lepage’s career spans some of the world’s top kitchens, including Daniel Boulud’s Daniel and Café Boulud in New York, Maison Boulud in Montréal, Café Boulud at Rosewood Baha Mar, and Mauro Colagreco’s restaurant at Raffles London at The OWO. Recognized for his mentorship-driven leadership and his creative, almost musical approach to cooking, he brings refinement and innovation to every dish.

Canadian chef Jonny Lake began his culinary journey in Montréal, Québec, before training at the Institut de tourisme et d’hôtellerie du Québec and refining his craft in Italy, notably under Gualtiero Marchesi at L’Albereta. In 2005, he moved to the UK to join The Fat Duck in Bray, where he met sommelier Isa Bal, beginning a 12-year creative partnership. Together, they opened Trivet in London in 2019, earning a Michelin Star in 2022 and a second in 2024. In 2025, the duo partnered with COMO Metropolitan London to launch Labombe by Trivet, led by Canadian Head Chef Evan Moore.
