Each month, he creates a new tasting menu that blends authenticity, artistry, and innovation, celebrating the depth and evolution of Levantine flavors.

François Rousset-Martin is an iconic winemaker in the Jura region of eastern France. He produces an impressive range of wines from micro-parcels of Chardonnay and Savagnin grown on the dramatic slopes of Château-Chalon. His portfolio also includes expressive red wines from Jura, Burgundy, and Beaujolais, as well as long-aged oxidative wines typical of the region.
