 We are extremely honoured to welcome Michelin-starred chef Vincent Arnould, Meilleur Ouvrier de France, and executive chef José Mettler, to create a menu that subtly blends Quebec ingredients with French gastronomy.

Born in 1970, Vincent Arnould trained at the Audincourt Hotel School in the Doubs region. He had three major encounters that marked decisive milestones in his career. First, his teacher, Mr. Jaegger, who inspired him. Later, Gérald Passedat in Marseille, and finally Serge Chenet, who instilled in him a love for competitions and a sense of discipline. In 1998, Vincent won the Taittinger Prize. In 2001, he became the chef at Le Vieux Logis, earning a Michelin star in 2005 (which he has maintained since). Two years later, he achieved his dream by earning the title "One of the Best Craftsmen of France" (Un des Meilleurs Ouvriers de France). His Cuisine: The focus is on seasonal cuisine, primarily crafted with regional products—a reimagined, modernized approach to cooking that remains, above all, indulgent.

Originally from the beautiful Alsace region in France, José Mettler honed his culinary skills in Michelin-starred and prestigious restaurants such as "La Réserve de Beaulieu," "Au Pont de Brent" in Switzerland, and "Le Vieux Logis." Passionate about travel, he broadened his gastronomic expertise around the world, including two years in Montreal at the restaurant Derrière Les Fagots. These experiences allowed him to develop a cuisine that combines refinement and generosity. Driven by the challenges of his profession, José thrives on sharing his craft, bringing joy to his guests, and passing on his knowledge. Today, as an inspiring, creative, and perfectionist executive chef for the renowned Georges Blanc, he skillfully leads the culinary teams of several well-known and respected brasseries in France.
