With nearly twenty years of experience, Thomas Chisholm, born in 1991, is a young Franco-American chef known for his creativity and technical precision, advocating a transdisciplinary approach to cuisine.

Elias “Louie” Deligianis began his career under Geoff Hopgood in Toronto, then moved to London to refine his skills at the iconic St. John Bread and Wine, where he embraced a philosophy of precise, ingredient-driven cooking. Louie later relocated to Montréal, working at the acclaimed Joe Beef before becoming Chef de Cuisine at Pastel, formerly led by Jason Morris. In 2020, Louie opened Bistro La Franquette, where his disciplined approach, deep respect for seasonality, and refined execution define the kitchen’s identity.
