A culinary creation by Dominic Labelle of Parcelles
An experienced chef who has worked in several of Montreal’s top restaurants, Dominic Labelle started Parcelles, a market farm dedicated to rare vegetables and a countryside dining experience located in Austin, in the Eastern Townships. He is delighted to visit the Village Gourmand to offer us a culinary demonstration alongside his childhood friend, Chef Oli. Pleasure and flavors guaranteed!

From the age of 15, Dominic Labelle began working in the restaurant industry at St-Urbain in Ahuntsic, while continuing his studies. After working in several of Montreal's finest restaurants, including Hôtel Herman and Foxy, he discovered market gardening during an internship in Europe. Upon returning to Quebec, he undertook a bachelor's degree in ecological agriculture at McGill, which led him to work at Les Pervenches vineyard.
At the end of his studies, he started his market garden, dedicated to rare and exceptional vegetables for Montreal restaurants. Two years later, he opened Parcelles, a farm-to-table restaurant on his farm.

Chef Oli, a self-taught culinary artist, climbed the ranks in the kitchens of various restaurants before becoming an entrepreneur in 2015. His mission is to showcase to the general public the joy and simplicity of cooking by breaking down the process into easy-to-understand steps. He likes to say he specializes in "comprehensible cuisine."
As a visible minority who grew up in Montreal, Chef Oli wished he had seen inspiring role models who represented him on Quebec television. This desire fuels his dual mission:
1. To inspire young people (and the young at heart) to embrace the limitless opportunities life offers when they discover a passion and pursue it wholeheartedly.
2. To remain true to his nature and cultural richness while celebrating and promoting the cuisine of both Quebec and the wider world.
Chef Oli has appeared alongside Marina Orsini on *5 chefs dans ma cuisine*, on the set of *Curieux Bégin*, in *Sauve ma recette* (seasons 1 and 2), and in various televised culinary competitions. Since 2023, Olivier Louissaint, known as Chef Oli, has hosted his own show. In *Chef Oli vire champêtre*, he invites viewers to join him on his "crazy idea" of opening a countryside dining experience.
Now a weekly contributor to *Salut Bonjour*, Olivier hosts the "Moment de cuisine" segment every Tuesday at 9:15 a.m.
