Johanna Le Pape is an exceptional French pastry chef who has worked in some of the finest establishments in Paris. In recent years, through her passion for pastry, she has dedicated herself to combining indulgence with well-being.

We are honored to welcome her to Montréal en Lumière, where she will give a culinary demonstration of one of her delicious recipes. Johanne will be joined by Ariane Paré-Le Gal, co-owner of Gourmet Sauvage, author, and speaker, who has been showcasing boreal gastronomy for several years. Ariane will introduce Johanne to our boreal vanilla: sweet clover.

Johanna Le Pape

Johanna Le Pape, pastry chef, trainer, and consultant, combines her passion for sports and pastry. As the 2014 World Champion of the Arts Sucrés, she promotes healthy and committed gastronomy through her business, Atelier Auraé, and her book, *Révolution Pâtisserie* (2023).

Ariane Paré-Le Gal

With a background in journalism, Ariane Paré-Le Gal spent over a decade working in the media industry as a columnist and host before taking over **Gourmet Sauvage**, a wild foraging and forest product transformation company founded by her father, Gérald Le Gal. Ariane is the co-author of the books *FORÊT* and *Cueillir la forêt*, published by Éditions Cardinal, two definitive guides on edible wild plants that have sold over 70,000 copies. She believes that boreal gastronomy is an extraordinary way to help people (re)connect with their wild surroundings and become its stewards. For Ariane, showcasing our northern pantry is an act of love and resistance.
